Step 1: Prepare the ingredients
You will need the following ingredients: 2 lbs of Beef Chuck Roast, 6 units of Thick-cut Bacon, 2 cups of Red Wine, 1 cup of Beef Broth, 1 Onion, 3 cloves of Garlic, 2 Carrots, 2 stalks of Celery, 2 tbsp of Tomato Paste, 1 tbsp of Flour, 1 Bay Leaf, 4 sprigs of Thyme, 1 tbsp of Olive Oil, Salt and Pepper.
Step 2: Cook the Bacon
In a Dutch oven or a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set it aside.
Step 3: Brown the Beef
Season the beef with salt and pepper. In the same pot used for cooking the bacon, brown the beef on all sides over medium-high heat. This will take about 5 to 8 minutes. Once browned, remove the meat and set it aside.
Step 4: Cook the Vegetables and Beef
In the same pot, add the chopped onion, garlic, sliced carrots, and celery. Cook them over medium heat for about 10 minutes until the vegetables are softened. Add the tomato paste and flour and cook for another 2 minutes, stirring constantly. Pour in the red wine and beef broth, stir well and bring the mixture to a simmer. Add the bay leaf, thyme, and beef to the pot and bring it to a boil. Once it boils, lower the heat, and cover the pot. Let it simmer for about 2 to 3 hours, stirring occasionally.
